                                                              Easy Waffles

                                        1/2 c. cashews                                     2 c. oats, dry
                                        2 c. water                                           1/2 t. salt

        Place cashews in blender and add just enough water to cover them. Blend until very smooth. Add remaining ingredients and whiz one minute. Pour into hot waffle iron and bake until light and dry, 8 to 15 minutes depending on heat of the waffle iron. Serve immediately with your favorite syrup or fruit topping. Delicious with fresh hot applesauce and crumbled pecan pieces or with peanut butter, Pineapple-Strawberry Jam and a garnish of shredded coconut!
        These waffles can be made ahead of time in large quantities and frozen. Separate the waffles with wax paper and seal in freezer bags. Reheat individually in a toaster or toaster oven or several at a time in the oven.  

                            Pineapple-Strawberry Jam

                                        5 dried pineapple rings    
                                        16-oz package frozen strawberries or raspberries

        Place the pineapple rings in a flat dish and cover with the berries. Thaw overnight. When the pineapple rings have softened in the berry juice, whiz in blender until smooth. Pour into container and refrigerate. Mixture will thicken as it sits. Delicious on sandwiches, toast, waffles, or over fruit ice creams. Keep refrigerated; keeps ten days.

                                 Avocado Spread or Dip

                                        1 fresh avocado                     1/8 tsp. salt
                                        1/5 tsp. minced garlic             2 to 4 oz. firm tofu,
                                                clove or  garlic salt                optional
                                                or garlic power

        Peal and mash avocado until very smooth. Season to taste. If adding tofu, crumble tofu and mix into the seasoned avocado mixture. Great as a sandwich spread, cracker dip or for fresh cut vegetables!
